Production Process of Rusks
We'd like to show you around the production process of rusks. Would you like to know how our rusks are created? We'd like to introduce the process of making rusks piece by piece. We do our best to provide tasty rusks with safety and security first.
Process of creating rusks
1. Making French bread
･ Ingredients and production method
Basic French bread for rusks is baked - using a fine choice of wheat flour by our own special formula.
We start making rusks by mixing bread dough with a spiral mixer.
･ Shape the dough
We shape the dough carefully by hand to be the same in size. The photo on the right shows the process of making blueberry flavored French bread.
2. Butter coating
Baked French bread is cut into 1cm slices and coated with the clear upper portion of melted butter.
Each slice of the French bread is checked carefully to see whether or not the butter is spread evenly. It is very important because this process ultimately affects the flavor.
When the butter has seeped fully into the each slice of French bread, the next step is to put frosting on it. Granulated sugar that was well-examined for the size of its grains is used for our rusks.
We bake rusks with an oven from Levent, Sweden.This oven gives rusks a crispy texture by baking with high temperature and heated air.
Using this oven and baking with a certain temperature & time create the distinct flavor of Asakusa rusks.
When baked rusks have cooled completely, we wrap them individually. They are packed in a carrier-bag with the wind god and thunder god printed on the cover.
